{"id":50293,"date":"2022-07-15T13:47:34","date_gmt":"2022-07-15T11:47:34","guid":{"rendered":"https:\/\/balkangreenenergynews.com\/rs\/?p=50293"},"modified":"2022-07-15T13:57:14","modified_gmt":"2022-07-15T11:57:14","slug":"vodic-za-hotele-i-njihove-goste-saveti-da-se-smanji-bacanje-hrane","status":"publish","type":"post","link":"https:\/\/balkangreenenergynews.com\/rs\/vodic-za-hotele-i-njihove-goste-saveti-da-se-smanji-bacanje-hrane\/","title":{"rendered":"Vodi\u010d za hotele i njihove goste: saveti da se smanji bacanje hrane"},"content":{"rendered":"<h2>Leto je vreme godi\u0161njih odmora i \u010de\u0161\u0107eg kori\u0161\u0107enja usluga restorana i hotela, pa iako ih pose\u0107ujemo sa namerom da se odmorimo od svih briga, ne trebamo zaboraviti da i tada, uz malo napora, mo\u017eemo pomo\u0107i za\u0161titi \u017eivotne sredine, ali i spre\u010diti rasipanje resursa planete.<\/h2>\n<p>Kako bi se smanjilo bacanje hrane koje je, prema podacima Program Ujedinjenih nacija za \u017eivotnu sredinu (UNEP) na potro\u0161a\u010dkom nivou (doma\u0107instva, uslu\u017ena priprema hrane i trgovine) dostiglo 931 milion tona ili 17 odsto, Hrvatska je pripremila Priru\u010dnik za hotele &#8211; Smanji otpad od hrane kuhaj za svoje goste.<\/p>\n<p>U priru\u010dniku, koji je nastao u okviru pilot projekta, se navodi da je ranija <a href=\"https:\/\/food.ec.europa.eu\/system\/files\/2018-04\/fw_lib_wri-business-case_2018.pdf\">analiza<\/a> sprovedena u 42 hotela u 15 zemalja otkrila da primena mera za spre\u010davanje nastanka otpada od hrane tokom prve godine smanjuje ovaj otpad oko 21 odsto. Ina\u010de, pilot projekat u proteklih godinu dana sproveo je Fond za za\u0161titu okoli\u0161a i energetsku u\u010dinkovitost i to u dva hotela u Hrvatskoj \u2013 u Osijeku i Puli.<\/p>\n<blockquote><p>Najzastupljenije kategorije hrane u otpadu su testenina, hleb i proizvodi od \u017eitarica<\/p><\/blockquote>\n<p>Prva merenja na po\u010detku projekta pokazala su da se najzastupljenije kategorije hrane u otpadu ne razlikuju puno od evropskih studija i re\u010d je uglavnom o testenini, hlebu i proizvodima od \u017eitarica.<\/p>\n<p>Tako je Hotel Osijek imao zna\u010dajne koli\u010dine otpada od hleba, pa je, kako ka\u017ee Cetin Krnjevi\u0107, koordinatorka pilot projekta u Fondu, menad\u017ement promenio standarde i taj otpad je smanjen 50 odsto.<\/p>\n<p>U skladu sa hijerarhijom upravljanja otpadom hotelima se sugeri\u0161e smanjenje otpada na izvoru, a onda ponovna upotreba vi\u0161kova hrane pri izradi novih jela. Preporuka je napraviti kompost s organskim ostacima hrane, \u010dme se dobija humus ili kompost. Osim toga deponijski gas ili metan doprinose klimatskim promenama. Na kraju, ako se smanji bacanje hrane smanjuje se kori\u0161\u0107enje resursa, kao \u0161to su voda, energija, zemlja, u njenoj proizvodnji.<\/p>\n<p>U Fondu ka\u017eu da je <a href=\"https:\/\/www.fzoeu.hr\/UserDocsImages\/brosure\/Priru%C4%8Dnik%20za%20hotele%20-%20Smanji%20otpad%20od%20hrane%20kuhaj%20za%20svoje%20goste.pdf\">Priru\u010dnik<\/a> izra\u0111en kao alat hotelima da smanje koli\u010dine bio-otpada, posebno otpada od hrane jer su na sa\u017eet na\u010din predlo\u017eene aktivnosti za redukciju, obja\u0161njena je metodologija merenja koli\u010dina otpada i izra\u010dunavanje finansijskog tro\u0161ka koji se stvara.<\/p>\n<hr \/>\n<p><span style=\"color: #008000;\"><strong>DA ZNAMO<\/strong><\/span><\/p>\n<ul>\n<li><em><strong>14%<\/strong> hrane u svetu izgubi se izme\u0111u \u017eetve i potro\u0161nje, a <strong>17%<\/strong> u potro\u0161nji (doma\u0107instva, uslu\u017ena priprema hrane i trgovine).<\/em><\/li>\n<li><em>Prose\u010dno hrvatsko doma\u0107instvo godi\u0161nje baci <strong>216.345 tona<\/strong> otpada od hrane, svaki stanovnik <strong>54 kilograma<\/strong>, od \u010dega je jestivi deo <strong><a href=\"https:\/\/balkangreenenergynews.com\/rs\/u-otpadu-od-hrane-u-hrvatskoj-ima-40-odsto-jestivih-namirnica\/\">40%<\/a><\/strong>\u00a0ili oko <strong>22 kilograma<\/strong>.<\/em><\/li>\n<li><em>Poslovni sektor godi\u0161nje baci <strong>7. 034 tona<\/strong> otpada od hrane, dok na jestivi deo otpada <strong>19.311 tona<\/strong>.<\/em><\/li>\n<li><em>Najvi\u0161e otpada od hrane u Hrvatskoj nastaje u primarnoj proizvodnji hrane, <strong>58 odsto<\/strong>, sledi ugostiteljski sektor sa <strong>22%<\/strong>, od \u010dega je jestivi deo <strong>25%<\/strong>.<\/em><\/li>\n<li><em>Hrvatska se obavezala da do 2022. odvojeno sakupi <strong>40%<\/strong> proizvedenog bio-otpada.<\/em><\/li>\n<\/ul>\n<hr \/>\n<h3>Kako gosti mogu da pomognu?<\/h3>\n<p>Jasno je da od pona\u0161anja gostiju hotela i restorana zavisi dosta. To potvr\u0111uje podatak iz Akcijskog programa za otpad i resurse (eng. The Waste and Resources Action Programme \u2013 WRAP) da otpad od hrane u hotelima naj\u010de\u0161\u0107e nastaje u pripremi hrane (34 odsto), prilikom bacanja nepojedene hrane iz tanjira (34 odsto) i zbog njenog kvarenja ili zastarevanja (21 odsto).<\/p>\n<p>Zato je va\u017eno da hoteli shvate da moraje da edukuju svoje osoblje i promene na\u010din rada, ali i da prilagode komunikaciju sa gostima.<\/p>\n<blockquote><p>Gosti odre\u0111uju koli\u010dinu hrane koju \u0107e staviti na svoje tanjire<\/p><\/blockquote>\n<p>Direktorka hotela Osijek Sandra \u0110ur\u0111evi\u0107 istakla je da je pona\u0161anje gostiju prilikom konzumacije hrane isto va\u017eno jer gosti odre\u0111uju koli\u010dinu hrane koju \u0107e staviti na svoje tanjire, naj\u010de\u0161\u0107e serviranu po principu \u0161vedskog stola. U takvim prilikama \u010desto se zna dogoditi da se na tanjiru na\u0111e vi\u0161e hrane nego \u0161to se stvarno mo\u017ee pojesti.<\/p>\n<p>Nenametljivo preneti poruku gostima da na svoj tanjir uzmu onoliko hrane koliko mogu pojesti je uspelo kroz poslu\u017eivanje manjih tanira, ali i putem poruka na malim \u0161atorima koji su postali neizostavan sadr\u017eaj na stolovima, objasnila je \u0110ur\u0111evi\u0107.<\/p>\n<p>Ina\u010de, Fond namerava da nastavi projekat i u drugim hotelima u Hrvatskoj, a vremenom i u ustanovama u kojima postoje velike
